Tandoori chicken

Tandoori chicken

Following a traditional tandoori chicken sauce of :

6 tablespoons plain yogurt
7 tablespoons heavy cream
2 1/2 tablespoons fresh ginger (chopped)
4-6 garlic cloves
1 teaspoon ground cumin
1/2 teaspoon garam masala powder
1 teaspoon saffron
1 teaspoon red chili powder

I decided to go ahead with more of a tandoori kebab approach, using chicken breast rather than a whole chicken, and letting it cook on my stove top grill next to green peppers and red onions. finishing up the serving next to basmati rice, lemon and some extra yogurt for presentation.

returning to Snack for a dinner. I do think that it is almost impossible to beat their lunch sandwiches deal but the dinner has also a nice array of flavors to offer.

the Melitzanosalata – roasted eggplant dip and the Tzatziki – cucumber yogurt dip were amazing, some of the best eggplants I had around NY, I would also give many points to the pita bread served with it, really good and un-usual for the NY pita scene.

The Keftedakia – veal meatballs w/almonds, pine nuts and prunes served over hylopites in a red wine reduction, reminded me a bit the flavor of old style Jewish chopped liver, though with much richer setting. another amazing dish.

Kalamari Salad

The Kalamari Salad which is sauteed calamari w/ black olives red onions, oranges and arugula tossed in a spicy citrus vinaigrette, was also interesting, but didnt make a good pict, though I am still not sure if I regret not having the anchovies.

Frankies 17 seems to be also a great brunch place not only if you are trying to avoid the line at the Clinton St Bakery but as a flavor destination as itself. I really like their selection of cheeses though I choose to go with a light granola for this 2nd brunch while my friend had the Frittata.

Raita

Raita is the most refreshing thing to any meal, if you like yogurt and cucumbers, this is taking it to the next level with the add on of spices from the garlic and chilliness from the chili oil, this is one of the things that simply leaves me speechless.

Ingredients:

225 g cucumbers, peeled and seeded, chopped.

500ml plain yogort

4 tbps fresh mint, chopped

1 tsp salt

1 tsp chili oil

1 tsp minced garlic

Method:

simply combine all the ingredients together, add the yogurt and chili oil, mix well, serve or keep in a cool place [this would keep well prob for a day or two]

Blueberries & Yogurt Soup

Blueberries & Yogurt Soup

light and refreshing blueberries and yogurt cold soup recipe, very nice as a summer dish [3 serving]

Ingredients:

2 cups blueberries
1 cinnamon stick
1 cup water or chicken stock
pinch of salt
2.5 tbps sugar
1/4 cup milk
1 Tbsp cornstarch
1 cup plain yogurt
zest from one lemon

Method:

1. place berries, cinnamon stick, water, salt, sugar and lemon zest in a saucepan, bring to boil and simmer for 5 min.

2. remove the cinnamon stick, place in a mixed or using a hand mixer, process the mixture in to a light puree.

3. return the mixture to the pan, add milk and cornstarch. cook over a medium heat, till mixture is thicken slightly.

4. remove from the pan, add yogurt and mix well.

5. cover and chill in refrigerator for 2 hours, spook into bowls and garnish with blue berries and some cinnamon powder.

Mango Relish

Indian Mango relish or mixed relish is one of the most amazing flavors, the only thing beside wow that I can say about it is that it could become very addictive once you see how easy it is to make a great dinner with it in less the 15 min.

Here I am serving it with white rice, yogurt [plain, low fat], some carrots and a chunk of mixed relish. I find out though that this works also really great on a side of chicken cutlet [as a substituted to mastered]
