Trattoria Sabation, Just from the other side of the arno river, very authentic Tuscan spot, out side of the main tourists area, not that I had much idea of how to order or what, but everything that came after was quite superb.

Tuna Tartare with Shaved Fennel Salad

I always wanted to make tuna tartare and never realized how easy this recipe is. all it takes is super fresh tuna. so this weekend on the way back from running in the park I stopped by the Blue Moon Fish stand in the farmers market. when I got there it seems they only got left on piece of tuna chunk rather than a stake, which is perfect for tuna tartare.

Ingredients:
3/4 lbs fresh tuna.
Juice from 2 limes.
Zest from one lime
2 jalapeno peppers (thinly sliced)
1 tbsp freshly ground ginger
1 tsp wasabi powder
1/4 cup minced scallion
1 hass avocado (sliced into small cubes)
4 tbsp Olive Oil
Sea salt

Method:
1. Slice the tuna to thin slices and than small cubes.
2. mix all the ingredients in a bowl and carefully add the tuna.
3. let sit for an hour before serving (this would allow the lime juice to cook the tuna)
4. serve with shaved fennel salad on top.

Perfect summer salad, special for topping dishes like this tuna tartare.

Ingredients:
Market greens
1 fennel bulbs – shaved with a mandolin
2 tbps shaved ginger.
3 tbps extra virgin olive oil
2 thyme springs.
1 tbsp fresh lemon juice.
salt, pepper.

Method:
Mix all the ingredients, season and serve.

Fennel & Tomatoes Soup

Really nice and refreshing summer soup, with the adds on of a splash of Pernod this really elevate the anise flavor to a great place.

Ingredients:
2 Large Fennel bulbs – finely chopped

2 tbsp fennel seeds, crushed

1 medium onion – finely chopped.

4 garlic cloves – finely chopped.

1 all-purpose potato, peeled and cubed

8 cups chicken stock (heated)

2 cups of peeled tomatoes

64ml Pernod

salt, pepper

Method:
1. In a large pan heat olive oil and saute the garlic and onions for a few min.
2. Add the fennel, let cook for 5 min and add the potatoes and cook for another 15min.
3. Add the tomatoes, fennel seeds and chicken stock.
4. Bring to boil, reduce to simmer, cover and cook for another hour.
5. Remove from the heat. using a hand mixer or a standing one, carefully mush the soup, till smooth.
6. Set back on the fire, add a splash of Pernod and cook for another 5min.
6. Serve hot with your favorite bread.

Fennel Soup

Fennel Soup

‘Creme de Fenouil’ recipe, with a nice addition of Prenod. here I am serving it with home made Focaccia bread and sun dried tomatoes

Ingredients:

4 tbsp Butter

3 Large Fennel bulbs – finely chopped

2 tbsp fennel seeds, crushed

2 leeks, thinly sliced

1 all-purpose potato, peeled and cubed

1.5 liters chicken stock

250ml dry white wine

64ml heavy cream

64ml Pernod

salt, pepper

Method:

1. melt the butter, add the leeks, fennel, and fennel seeds and sweat for 12-15min

2. add the potato cubes, chicken stock and wine, bring to boil and reduce to simmer till the potato is tender.

3. Transfer the mixture to a mixer and puree.

4. strain the mixture if it still contain any un-liquidated parts.

5. return the soup to the pan, add the heavy cream and Pernod, bring to simmer and season
