quick home style pasta, inspired by the trimming actions of my basil plant resulted with this yummy dish, the recipe is just a simple triple beef – tomatoes with some small twists like orange zest and a lot of home made herbs.

First time having an Iranian meal I must say that I was very surprised with the tangy lemon flavors from this kitchen, coming up in different ways and colors.

a mix of of wild arugula, Italian basil and Yemeni basil, which taste very much like anise rather than basil.

Traditional Gondi soup is something kind of like very tangy lemony matzo ball soup, though the matzo balls are made from mashed garbanzo beans and peaces of chicken in to a very dense texture.

horscht sabzi soup, again this dosnt taste like anything that it looks like, its has a very rich tangy lemon flavor with a fantastic mix of greens. you can see in the pict one of the Parisian dark lemons which you dont eat directly but make great presentation and flavor boost.

Parisian meat balls dish called Ashe, I suspect that the caramelized onions on the top only served to balance some sweetness to the lemony nature of this dish.

Basil oil is something that can be super easy to make, yet it really bring something special with in it, something about the extra effort that makes it just so good. the color is also just another thing to meditate on. all that you have to do is finely chop 15-20 basil leafs put them in a food processor with 75ml of extra virgin olive oil, mix well and strain 2-3 times through a fine chinois.

Pasta Con Melanzane

Amazing eggplant and mozzarella pasta recipe, this is a real joy, no joke.

Ingredients:

1 eggplant

2 garlic cloves, finely chopped

2 shallots, finely chopped

half onion, finely chopped

1 can whole plum tomatoes

1 tbsp balsamic vinegar

4 tbsp chopped basil, finely chopped

4 tbsp heavy cream

7 oz fresh mozzarella (cut in small cubes)

pepper flakes, salt, olive oil

Method:

1. trim – peel the eggplant and cut into 0.5 cubes. and set a side in a colander for 2 hours so the eggplants lose their bitterness.

2. heat 6 quarter of water in an 8 quarter pan. and add a lot of salt.

3. In a large pan, heat the olive oil over medium heat, when the oil is ready, add the eggplant and saute for 7-8min.

4. Mix into the pan the onion, shallot and garlic, cook for 2-3min.

5. mix in the basil.

6. add the tomatoes, vinegar and a tbps of pepper flakes, season with salt. and let simmer for 15min.

7. mix in the heavy cream little by little.

8. Set the pasta into the boiling salt water, when almost cooked, fish out and mix with the sauce.

9. serve hot with the fresh mozzarella cubes, and sprinkle with fresh herbs (parsley, or extra basil would work great here)

Motzorela & Tapenade Sandwich

This sandwich recipe is what I call the perfect lunch, I keep a Tapenad jar and some motzorela in the office, on lunch time all it take is a short trip to the bakery across the st’ and the vegetable cart on the way back, for less the 2.5$ this is what you get!

Ingredients:

1 lbs of mixed olives [I like to use a combination of black olives, both calamata, French and Moroccan olives]

4 tbd of salted capers [rinsed]

12 fresh basil leafs [finely chopped]

2 tbs freshly squeezed lemon juice

50g lightly toasted pine nuts

2 anchovy fillets, rinsed.

4 tbs extra virgin olive oil

2 garlic clove minced

1 teaspoon dried thyme

Preparation:

1. roughly chop the olives and place in a large dish.

2. filnley chop the pine nuts, basil and thyme and add them to the olives.

3. add the garlic, capers, lemon juice to the mix and start blending with a hand blander, slowly add the olive oil to smooth the mixture.

4. do not over bland so some of the olives maintain their atractivness

I like to keep the Tapenade in the refrigerator for 4-7 days so the flavors all adds up.

for a really great sandwich, simply get a nice bread, spread it over, slice some motzorela and garnish with fresh basil.
