for appetizers we had the Kiopoolu – a Bulgarian eggplant salad and the Lyutenitsa which is a roasted pepper dip (at first this seems to be quite sweet for me, but than I understood how well it goes with the Kebab)

than we had the Kashkaval Pane – peeled pepper stuffed with cheese, covered with bread crumb and lightly fried.

For main courses we shared a Bulgarian lamb stew, which with the right presentation could have been a complete fine dinning experience by itself, but the chef had no idea how good it is and served it “casalinga” style.

visiting my sister house we made an Israeli style BBQ, aka Mangal, the approach is very topical to any other Israeli attitude you can accept, very strait forward and simple, letting the freshness and the ingredients do the work. going to the market with my brother in law I learned why baba ganoush can taste different in other parts of the world, the eggplant they are using is called Baladi Eggplant, which has less seeds and bitterness inside and shaped slightly different from a regular eggplant. for the main dishes we made lightly marinated chicken and beef strait on an open BBQ.

another interesting thing which I came across while the visit in the Israeli market store which was greatly affected by Russian influences in the last 10 years, is this combination of pickled vegetables which include traditional pickles from cucumbers aside to pickled tomatoes and a vegtable which I notice for the first time called Potison – doesn’t have a lot of flavor but kind of goes in an okay bit with the right meal (not the one we made).

visiting Israel, my brother took me to visit one of its more authentic hummus spots, Ramle definitely not a major tourist spot, but at the same time definitely should become one. we had the traditional hummus with beef which my brother complained about the portion but was more then enough for me, and some fresh Israeli salad (originally known as arabian salad in Israel)

walking out from the restaurant we took a walk through the Ramle market, a place worth visit as itself, where we had this Mahalibiya (also called malabi) the originally from Turkey but also very popular in the Israel, served with rose water, coconuts and almonds.

following the Baba Ganoush revelation post from Mark Bitman, I decided to make an attempt to try my own version, being aware of the limitation of an home oven vs out side grill where these were done, I knew that getting a full smoky flavor would be quite challenging, I choose method B of slicing the eggplants to small rounds, letting them sit for 2 hours with salt, then baking them on two sides, this came out very nice and flavor full, but I think I might add some extra grilling step next time to get the full smokiness edge, or perhaps try baking them wrapped with foil. anyhow as Mark said, this is quite an easy thing to do at home. next to a home made hummus this is a great next step.

Another successful test for the new grill, a simple combination of chopped onions, parsley, cumin, turkish hot paprika (treditonaly you should add some pine nuts for this, but I ran out of them…), shaped into small cigar shapes, and quickly grilled on each side.

Testing my new grill, we decided to make some grilled chicken at home, a quick marinade from sesame oil, soy sauce, garlic, brandy, cayenne pepper and some herbs resulted with this very tasty grilled chicken, a repeat coming very soon.

making ny strip steaks at home using my new oven top grill to make some smoke in the house and get everyone excited about the flavors to come, this all it takes is seasoning the meat and than a few min on each side seeing they get nice lines and flipping them over, while just before serving glazing them with reduce veal stock & wine in sauteed shallots, and a lot of butter to assemble it all together. here served with Rissole Potato Ball and some home made mayo

very simple clams recipe, simple place the clams in a large pot, add white wine, celery and a few harts of tomatoes to the mix, cover and heat till they open up. great to have next to this dish is a bread to pick up the remaining liquids.
